The 2021 Assyrtiko is unoaked, very dry and comes in at 13.6% alcohol. This was sourced from 20- to 25-year-old vines. A ripe and textured Assyrtiko, this is otherwise a bit bland in flavor. There is, though, some bite on the finish, a little tension. It is a well made but straightforward Assyrtiko that's perfect for a restaurant pour, able to hold up to foods and not break the bank. Drink it over the next couple of years for best results, but it should hold even better.
