A pure Grillo, which bewitches for its ability to speak an ancient language, in some ways archaic, in a totally contemporary version vinified in steel enhances its orgnalotectic thickness, its flavor texture, sapidity and freshness that form the basis of its personality. a great interpreter of the classic island grape variety. The harvest of grillo is carried out between late August and September, at the first light of ‘dawn to preserve the organoleptic characteristics. Here we value a variety that is representative of the island, but relatively recent: in fact, Grillo is “the youngest of the ancient” Sicilian vines, the result of a cross between white Catarratto and Zibibbo, developed by Baron Antonio Mendola of Favara (1827-1908), a passionate agronomist and ampelographer. Its broad and deep bouquet presents notes of broom and hints of citrus on the palate has good structure and is mineral and persistent.
